My favourite cookbooks...

Anyone who knows me or has ever been to my home will know that I have a general book obsession. I have always loved to read and a trip to the local bookshop is one of my most favourite things ever.

Warm Quinoa Salad with Roasted Cauliflower and Sweet Potato

February can be a strange time of year for cooking. We no longer want the hearty comfort food we enjoyed in winter but Spring is not quite here yet with its fresh flavours. Warm salads are the perfect go between and this wonderful recipe takes advantage of the humble cauliflower which is currently in season and elevates its flavour to a new level.

Orange, Almond and Cardamom Cake

The changing of the seasons is such a magical time for me. The move from winter into spring signifies new beginnings and there's a palpable sense of anticipation throughout nature.  There was some definite warmth in the sunshine this morning and I'm feeling a renewed energy to get creating in the kitchen and back in my garden.

Vegan Lamingtons

I first came across these delightful cakes when in Australia visiting family more than 10 years ago. They seemed to range from tiny bite size treats to much larger cakes but all kept that classic combination of light sponge cake filled with jam, coated in chocolate and shredded coconut.

Vegetable and Bean Lasagne

So I guess I should start this post with a very happy new year to all my lovely readers. New Year's Eve passed by uneventfully here with all three kids tucked up in bed and shamefully I was asleep by 10.30 myself!

Midweek Mushroom Pasta

With only a week and a half to go until the end of term, things are getting pretty hectic around the Rhubarb and Beans household! In-between decorating the house, present buying, school nativities, and Christmas parties there's not a lot of time left for cooking!

Vegan Chocolate Orange Cupcakes

It has not gone unnoticed that most of the recipes I have posted recently have been sweet rather that savoury. This really isn't just that we only eat cakes and biscuits I promise!

Vegan chocolate pecan brownies

I have always loved a good chocolate brownie. I consider myself a bit of a connoisseur if I'm honest having eaten way too many in my time! Too soft and gooey and you have yourself a dessert that needs a spoon, too cakey and it doesn't really qualify as a brownie to me...

Perfect Vegan Rhubarb Cake

Rhubarb season is definitely upon us and as I'm sure I've mentioned before I am fortunate enough to have wonderful rhubarb growing in the garden, a cutting from a plant that used to belong to my Nan, fifty years ago.

Cinnamon and Raisin Oat Cookies

All of us seem to have busy lives these days and whilst I love nothing more than spending hours in the kitchen its the quick easy recipes that become favourites in our house. Anything that can be whipped up and cooked in less than half an hour is a winner with me.

Red Lentil, Thyme and Lemon Soup

The temperature has dropped here the last few days and there's been frost on the ground in the morning again. Despite those reminders that we are not quite done with winter yet I do believe I detected some warmth in the sunshine that peeped through today.

The best gluten free Mince Pies ever!

We are a divided bunch in this house when it comes to mince pies. Myself and Dan love them and it has become somewhat traditional to eat a mince pie every day from the 1st December until Christmas day.

Gingerbread Snowflakes

With only two days left to go until the Christmas holidays begin we are well and truly embracing the festive spirit here at Rhubarb and Beans. The tree is up, the elf has returned and the kitchen is full of the smells of Christmas.
