Warm Quinoa Salad with Roasted Cauliflower and Sweet Potato
February can be a strange time of year for cooking. We no longer want the hearty comfort food we enjoyed in winter but Spring is not quite here yet with its fresh flavours. Warm salads are the perfect go between and this wonderful recipe takes advantage of the humble cauliflower which is currently in season and elevates its flavour to a new level.
Orange, Almond and Cardamom Cake
The changing of the seasons is such a magical time for me. The move from winter into spring signifies new beginnings and there's a palpable sense of anticipation throughout nature. There was some definite warmth in the sunshine this morning and I'm feeling a renewed energy to get creating in the kitchen and back in my garden.
I first came across these delightful cakes when in Australia visiting family more than 10 years ago. They seemed to range from tiny bite size treats to much larger cakes but all kept that classic combination of light sponge cake filled with jam, coated in chocolate and shredded coconut.
Vegan chocolate pecan brownies
I have always loved a good chocolate brownie. I consider myself a bit of a connoisseur if I'm honest having eaten way too many in my time! Too soft and gooey and you have yourself a dessert that needs a spoon, too cakey and it doesn't really qualify as a brownie to me...
Most of the meals and dishes I make for my family are on an ad hoc basis and change depending on whats in the fridge/veg box etc. Whilst I love this free way of cooking it can be frustrating not to have a record of specific ingredients and quantities for a dish that has worked or equally one that hasn't.
